Looks like a big gap but so much has been going on since my last post. . . like the extreme cold that hit Texas in February causing huge power outages and many broken water pipes. Also the covid19 vaccinations were delayed for several days so my second dose was late by 5 days . . .but I am now fully vaccinated.
I was attempting a sweet dough for a canned apple mix (ugh, I know, it wasn't that good). I made one batch with the apple mix straight from the can although I did add cinnamon and some extra butter. For the second batch, I added some more flavoring to the mix including melted butter, lime juice, nuts and other bits of dried fruit. Much better but I think I prefer other filling. What will I do with the remaining can of the apple pie mix??
Then I spotted hamantaschen in Jewish baking cookbook I checked out from the library. I didn't actually use the dough recipe from the cookbook as I found one at a website done by Jamie Geller that uses cream cheese. Not a great taste to me even though I love cream cheese. I used apricot preserves for the filling. I think they are worth doing again but maybe a different dough.
I didn't do too bad on my shaping . . . practice, practice!!
