I didn't take photos but this is the recipe I used: Shepherd's Pie
I made it using ground beef but I think I'll try ground lamb next time. The recipe calls for frozen peas and carrots which, for some reason, I didn't find at the grocery the day I shopped. I used a bag of mixed vegetable instead (peas, carrots, green beans, corn) along with the corn called for in the recipe. I like the addition of the green beans. I can always use more vegetables.
The mashed potatoes which go on the top are mashed with parmesan cheese. Very tasty.
This is a good dish to add to the main dish rotation. I need to expand my depth of protein dishes . . .although maybe not so much cheese which I love.
UPDATE: I made this again using lamb. I think it is tastier. I also added more of the frozen vegetable mix because I needed to use up those partial bags. I did add some fresh orange and yellow peppers which added to the flavor. Another thing I did was add some chipotle pepper to the mashed potatoes along with a lot of parmesan cheese.
This time I made sure to get photos.
