Italian Baker redux

 Remember when I posted about the pugliese bread recipe I wanted to attempt from a book I checked out from the library??

This book!!   It has now been returned to the library.  

I decided not to buy a copy but . . . I made copies of pages I wanted to keep.  Of course the pages related to the pugliese and ciabatta breads that I have made a couple of times.  Then I flipped through for another quick look and found a few more things to try.   I have lots more baking to do!

My main recipes using the biga starter plus some I haven't attempted yet.


Italian version of croissants . . . . cornetti!!!


Varieties of tasty breads with additional ingredients . . . cheese, potatoes, mushrooms!


And RYE bread recipes!!!   My search for a rye I can make with good results is ongoing and I hope these will help me along that path.

In search of a good rye bread recipe for me!!

 I have had some disastrous attempts so far in baking rye bread.  I have lots of rye and pumpernickel flour so I will continue my search.  I have a few recipes printed out from the WWW.  The latest one I tried tasted good but the dough didn't really rise enough and I really dislike working with the cast iron dutch oven . . . so heavy to maneuver in and out of the over and the over has to be so hot.

I found some Italian rye bread recipes in the cook book where I found the pugliese and ciabatta recipes I like.

So one of these might be attempted soon.


Also, there are more rye bread recipes on King Arthur's site that I can attempt.  They also sell some rye bread flavor and dough improver which I have ordered to try.

Meanwhile, I am still looking for recipes to compare.
