It took me a few days of sleep and recovering from jet lag before I managed to get myself out of the house. I wanted some chicken soup and I almost was going to just buy a rotisserie chicken. But I convinced myself to make from scratch. Underneath the big pile of turkeys, I found some small organic whole chickens. The perfect size to fit into my big pot.
With some onion, celery and carrot plus salt, pepper, garlic, thyme, sage . . . a boatload of spices that go with chicken reside in my spice racks, so I added lots of flavoring. Boiling this for awhile until the chicken was easy to pull off the bone.
Serving it up with some lemon and cilantro before I did the final prep on the soup.
Final touches. I stripped all the chicken from the bones. Strained the broth. Put most of the broth back in the pot along with more water to boil then added some rice along with the carrots and chicken. AND some more spice . . . I have a berber spice mix that added a nice measure of heat. Voila! Some good chicken soup to help me loosen up the congestion!
